上海腾拔质构仪助力上海交通大学在食品期刊发表研究论文

    2019年5日，食品期刊《Journal of Food Processing and Preservation》（IF=1.288)在线发表了上海交通大学农业与生物学院研究团队题为“Evaluation of the antifreeze effects and its related mechanism of sericin peptides on the frozen dough of steamed potato bread”的研究论文。

    在该研究论文中，研究人员利用上海腾拔的Universal TA研究型国产质构仪用于测定马铃薯面包的硬度、回复性、内聚性和咀嚼性等指标。
